I admit that I am pretty awful at decorating cupcakes, I desperately need to buy some piping bags... This was my first attempt at making vegan cupcakes and I personally think they taste amazing! I checked that everything I put into them was vegan before making them as well, such as the food colouring. This recipe also uses American measurements.
Ingredients
Cupcakes:
♥1 cup of non-dairy milk
♥1/2 cup of vegan butter
♥1 cup of caster sugar
♥1 teaspoon of vanilla extract
♥1 1/2 cups of self raising flour
♥1 1/2 teaspoons of baking powder
♥1/2 cup of bicarbonate soda
Icing:
♥1/2 cup of vegan butter
♥2 1/2 cups of icing sugar
♥1.4 teaspoon of vanilla extract
♥Green food colouring
♥Sprinkles
1♥ Preheat the oven to gas mark 4 and line 12 cupcake cases in a tray. I ended up having some mixture left over, so if you a second cupcake tray, it might be worth putting a couple more cases in it.
2♥Add the butter, sugar and vanilla extract to a large mixing bowl and beat together until fluffy.
3♥Next, add the flour, bicarbonate soda, baking powder and mix together until there are no lumps and the mixture is a smooth consistency.
4♥Divide the mixture evenly between the cupcake cases, make sure you do not overfill the cases as you don't want cupcake mixture to spill over the edge of the cases.
5♥Place your cupcakes in the oven and cook until they are golden brown, I cook them for roughly 15 minute. I like to stick a wooden skewer into them to see if they are cooked, if it comes out without any mixture on, then they are done.
6♥While the cakes are cooking I like to make a start on the icing, place the softened vegan butter into a large mixing bowl and mix until fluffy. I added 2 and a 1/2 cups of icing sugar but I did add a tiny bit more for taste. Pour that into the bowl and add the vanilla essence, mix until the ingredients are well combined.
7♥To make them look slightly more Halloweeny, I added green food colouring to the icing.
8♥Once your cakes are fully baked and have cooled down, add the icing and sprinkles, you will then have your vegan Halloween themed cupcakes ready to eat!
