I have been wanting to make these for such a long time! I was debating whether to use vegan butter and marshmallows, or just use a healthier vegan recipe. As I manged to get my hands on vegan marshmallows, which are pretty expensive, I decided to follow the original recipe. Due to the marshmallows being £2.49 for a 75g bag, I have decided to halve the ingredients, so if you want to make more just make sure you double it!
Ingredients
♥1 1/2 tablespoons of dairy free butter
♥150g of vegan marshmallows
♥1 1/2 tablespoons of dairy free butter
♥150g of vegan marshmallows
♥3 cups of any Rice Krispies cereal, I used Sainsburys own Rice Pops
♥1 blocks of vegan chocolate
♥Mickey Mouse shaped cookie cutter
♥1 blocks of vegan chocolate
♥Mickey Mouse shaped cookie cutter
1♥ In a large saucepan melt the butter over a low heat, once that has melted add in the marshmallows and stir until they have completely melted.
2♥ Add the Rice Krispies to the saucepan and stir until they are well coated in the butter and marshmallows.
3♥Once the Rice Krispies are evenly coated, apply a small amount of butter to a spatula. This will ensure that the ice krispies do not stick to it when you're transferring them into the pan. Evenly press the mixture into a pan of your choice, depending on how thick your want your treats to be.
4♥Smooth some butter around the edges of your Mickey Mouse cookie cutter. You can also use cooking spray to help with the stickiness. While the treats are still warm, press your cutter into the treats, ensuring it is pressed all of the way down.I even used my fingers to push the rice krispies to side of the cutter, to make sure if had filled every bit of space. Gently lift your Mickey Mouse cutter out of the pan and press the treat out of it onto a plate. Keep repeating this step until you simply cannot cut out more treats.
5♥When you have finished cutting out all of your treats, allow them to cool for a about 5 minutes, or for however long you would prefer.
6♥While you are waiting for the treats to cool down, melt some chocolate in a bowl over a saucepan of boiling water. Make sure you do not burn the chocolate.
7♥Once the chocolate has completely melted, take your Mickey Mouse shaped treats and dip the ears into the chocolate. I found it hard to dip them, so I took a spoon a drizzled it over the ears. Let the chocolate completely harden and enjoy!
Let me know if you've had a go at making these. Vegan, or not!
