Baking | Vegan Peanut Butter & Banana Cookies

When baking I always tend to stick to the same recipes and typically only ever bake basic cookies and cupcakes, sometime last year I decided to give baking some vegan cookies a go and I personally think they turned out amazing. I am vegetarian but I'd love to start trying out a lot more vegan recipes, so I thought I'd make these cookies and share the recipe I used with you. Like my Mickey & Minnie Mouse cookies I did follow an already made recipe but with this one I am going to change it slightly. You can definitely really taste the peanut butter in this cookies, so if you are not a fan of it you can always add less or just take it out of the recipe altogether and if you do not want to make as many cookies just simply half the ingredients! These cookies are super quick and easy to make, they also taste amazing, if you are someone who doubts vegan cooking and baking then definitely give these a go and try them out for yourself!


Ingredients
120g mashed bananas
125g peanut butter
70g dark brown soft sugar
100g caster sugar
1 and a half teaspoons of vanilla extract
165g plain flour
1 table spoon of baking powder



1Firstly, stir together the mashed banana and peanut butter until it is well blended, then stir in the dark brown soft sugar, caster sugar and vanilla extract until it is a smooth consistency. 

2♥ Once you have stirred those ingredients together combine the flour and baking powder and add it to the mixture and mix until it is all blended together. 

3 When the ingredients are all mixed together, gather the dough into a ball, cover it with cling film and place it in the fridge for at least an hour to chill. You can also put it in the freezer if you do not want to wait as long for it to chill. 

4♥ Preheat the oven to gas mark 5 and grab a non-stick baking tray, if you do not have one you can spray it with non-stick spray or cover it with baking parchment. Roll out the dough into a small sized ball, or you can roll them out to any size you prefer, they just might take a little longer to bake. Make sure you don't place them too close together on the baking tray, as they will merge together when are in the oven as they will spread out. 

5 Bake the cookies for 10 to 12 minutes, once they are done leave them to cool on the baking tray for at least 5 minutes before transferring them to a cooling rack. 

6 Eat and enjoy!
